Lots of color: red and yellow pepper, sugarsnap peas, broccoli, bamboo shoots, summer squash, onion, pineapple and chicken.

I simply used this thai sauce, no need for coconut milk or anything fattening. Be aware that both the brand and the format of sauces matters; most Thai sauces come prepared with oil and coconut milk, and are more than 70% calories from fat. This sauce is low fat and full flavor.

Dried fruit and oat muffins with fresh fruit. They’re dense and filling and super healthy.

You can ask me for the recipe if you’re interested, but of course there’s no butter.

Crunchy Tuna Steak Salad

Fresh tuna steaks rolled in peppercorns and sesame seeds, pan seared. The salad is fresh spinach and watercress with cucumber, alfalfa sprouts and raw sprouted peas. Balsamic vinegar and dried strawberry reudction sauce.

Pan grilled turbot, fresh from the market. All it needs is gentle cooking with salt and pepper. White beans with fresh parsley and garlic oil and ‘boiler onions’ (baked in their skins then removed). A winning combination of flavors, and you’d be surprised how little oil.

Turbot is a lot like Tilapia, mild and flaky, but a bit more buttery in flavor.

This is my take on black beans and rice cum burrito. It’s just a combination of flavors that I really like together.

Corn tortillas made from Maseca flour (you can use premade too), multi-grain rice, grilled chicken strips, chopped spring lettuce mix, and black beans. But not just any black beans, it must be Goya brand in the red can.

The salad is sliced pineapple, red and yellow pepper, mint, diced chipotle peppers, honey, salt, and rice vinegar. Sweet, Spicy, Crunchy; a favorite!

Chicken Udon Noodle Salad

This is the Asian kitchen sink salad. All kinds of fresh, uncooked vegetables and lettuces with grilled chicken and udon noodles. Topped with carrot ginger dressing.

Nouveau Tuna Salad

Tuna salad made with red peppers, fresh parsley, garlic, salt, pepper, lemon, and olive oil. Served with whole grain bread, garlic green beans and summer squash with onion and garlic. Very little oil was used in any dish, and no mayo needed!

Chopped baby kale (small leaves are more tender) with currants and toasted pine nuts, lots of parmesean cheese, and olive oil. With chicken-apple sausage.

Tosdadas, deconstructed.

Warmed soft corn tortillas, grilled summer squash, fat free sausage patties with pepper and chili, refried black beans, and what I call ‘deconstructed guacamole’ (sliced tomato and avocado in lime juice, salt, garlic, chili and olive oil). Topped with fat free cheese and sour cream, and white corn on the side. No butter.
